What do you do when you have ample time on ur hands ? Well its been a while since i tried something new as i used to be very busy here and there and got lot of free time on my hands so thought to share some nice , easy and popular recipes with u all. I learnt these from the chef where i normally eat out so it's not some online copied stufff but tasted, learned and tried . So u must make them at home for a perfect restaurant like flavor on ur table.

I'll share some special drinks, appetizers, salads, soups, meal and desert with u. All these recipes are for two persons so u can add up the ingredients accordingly. btw some saladas and soups itself are a complete meal . So u can just mix and match which one do u want . For example, cicken julian salad can be replaced with having something heavy in ur lunch. its a a very healthy and tasty salad/ Plz do try.


Khair less talk and more recipes.



Drinks




Mango Colada
Ingredients
Fresh Mango = 100 gms , Pineapple juice = 3 tbsp , Cream = 1 tbsp , Sugar = 1 ½ tbsp , Ice = 8 cubes , Lemon = touch
Method =
Blend all the ingredients in a blender and pour in glass. Garnish with mango slice. Now if u have frozen mango pilp then u dont need to put so much ice in it.








Spanish Margarita
Ingredients =

Mint leaf = 12 leaves , Lemon juice = 2 tbsp , Lime cordial (optional) 2 tbsp , Salt = a pinch , Sugar = 2 tbsp , Ice 10 cubes
Method =
Blend all the ingredients in a blender and pour in glass. Garnish with mint leaf and a lemon.







Suzy Wong
Ingredients.
Lychee =2 pcs , Milk = ½ cup , Sugar = 2 tbsp , Lemon = touch , Ice = 8 cubes Green colour 4 drops.
Method=
Blend all the ingredients in a blender and pour in glass. Garnish with lychee and cherry.








Golden Dream =
Banana = ½ piece , Coke = ½ bottle , Orange juice = 3 tbsp , Vanilla icecream = 1 scoop , Sugar = 1 tbsp , Ice = 8 cubes
Method.
Blend all the ingredients in a blender and pour in glass. Garnish with banana.









Peach Delight
Ingredients=

Peach = 2 pcs , Cream = 2 tbsp , Pineapple juice = ½ cup , Sugar = 1 ½ tbsp , Ice 8 cubes
Method=
Blend all the ingredients in a blender and pour in glass. Garnish with pineapple slice and peach.


Assorted Drinks








Appetizers and Salads.






Mix Vegetable Brucshetta Sorry light kay baghair aisay hee pics lee jaati hein / lol .. it was realluy tasty.
Diced tomatoes = 1. , Diced onions = 1. , Diced bell pepper = 1 , Fresh garlic clove (yummmm. Wat an aroma) 6 Butter 50 gms , Olive oil 2 tbsp , Mozzarella cheese 100 gms , Italian French bread 4 slices
Method.
Mix fresh garlic, softened butter , oregano and spread on toast . Mix all diced vegetables together and spread on the toast, Put mozzarella cheese on the top and grill in a pre heated oven for about three minutes and ready to be served.






Shrimp cocktail=
Large shrimp 5 pcs , Water = 250 ML , Lemon juice 2tbsp , Red chili powder 1 tea spoon , Bay leaf = 1 , Ice water
Method=
Bring the water to boil and put lemon juice, bay leaf, red chili powder in it. Now put shrimps in boiling water for two minutes and take them out. Dip them in ice water. Serve with cocktail juice and dipping sauce.
Dipping sauce is really very easy to make. Mix 2tbsp ketchup, ½ tsp lemon juice and few d rops of tobacco sauce. Yummy








Mozzarella in Carrozza
Bread slice = 8 slices , Mozzarella = 100 gms , Black olives 1/3 cup , 4 eggs and 2/3 cup milk to make egg wash. Oil for frying , Bread crumbs , Salt and pepper to taste.
Method.
Cut each slice of bread into triangles with equal amount of mozzarella slice and chopped olives. Coat bread slices with egg wash separately first and then make sandwich of bread slices putting cheese slice in the middle. Now dip the bread slices and cheese to egg wash, and then put into bread crumbs, repeat the coating and shallow fry in a pan for abt 40 seconds. ( in its original recipe, they did the deep frying) Serve with Mariana sauce. I hope u would have its recipe , if nahi then I’ll let u know inshallah.







Julian Chicken Salad.
1 Chicken breast , 200 gms ice berg lettuce , 1 sliced tomatoes , ½ piece of diced , cucumber , ½ diced onion , One hardboiled egg , 50 gms chickpea , 50 gms feta cheese , Shredded carrot , Black olive.
Salad's dressing
Mix ½ tbsp Lemon juice, ½ tbsp Dijon mustard , 6 tbsp extra virgin olive oil , salt and pepper to taste, honey 2 tbsp and 2 tbsp balsamic vinegar and serve with salad.
Marinate chicken breast for abt 20 minutes with salt, black pepper and red chili flakes. Grill on pan. Cook from both sides and cut from the middle ,cook that butterfly shape breast from the middle now. Cut into Julian pcs.
Arrange ice berg lettuce in a plate, put all vegetables on it and then top with grilled chicken. Garnish with cheese and grated carrots. Serve with the dressing.








Spicy cucumber salad.
Ingredients and Method.

Mix together 1 cucumber, fresh mint thinly diced, 1 tsp fish sauce, ¼ tsp chili powder, ½ tbsp sugar and 1 tsp lemon juice.

Chicken Wraps.

recipe is simple . tired of too much typing. LOL just put lettuce leaves, chicken veggies ... wrap up everything in ur tortila and bite it sleep.gif Whatever u want/ lol i used left overs of some veggies and chicken plus tomato.











Classic Lamb, Chick Pea and Lentil soup . Soooooooooooooo healthy
Ingredients.
1 medium Chicken Breast , 1 tbsp olive oil, 2 eggs , 1 flower wrap, ice berg lettuce , parmesan cheese 50 gms and salt & pepper to taste.

For dressing –Mix 3 tbsp mayonnaise, 1 tbsp water, ½ tbsp white vinegar , salt & pepper to taste.

Method.
Add few drops of olive oil in a pan and cook the chicken breast after pounding it. No need to marinate this one. Just sprinkle a pinch of salt and black pepper. Buss. Cook both sides and after a while take it out of the pan and cut from the middle and cook again. Just a tip to make things go fast. Okay. Now dice chicken into cubes once it is done.

Heat ur flour wraps in the same pan from both sides. Take out in the plate. Put lettuce on it and then spread dressing. Top it with chicken and tomatoes. (if u like olives u can add them too eg if I was making it for Miss Asia, I would not forget to put olives in my flour wraps sleep.gif ) Khair just roll and cut from the middle. Yummiest flour wraps ready in no time.









Chicken Monti Carlo Ala Rafi’s

2 tbsp oil, 200gms boneless chicken , 50 gms mushrooms , 20 gms garlic , ½ tsp crushed chili flakes , 1 tsp lemon juice, 20 gms spring onion , 50 gms flour , chicken stalk 2 cups , shell pasta boiled 100 gms , fresh parsley or cilantro for garnishing and salt & pepper to taste.

Method =

Add few drops of olive oil in a pan.
Toss chicken cubes in a dried flour in a way tht it is coated very well. This will actually make its gravy too. U don’t need to add corn flour in it. Okay now add these chicken cubes in heated pan. If u feel like adding little bit more olive oil ,u can at this stage as flour would absorb it immediataely. Add garlic paste and stir well and a dd chicken stalk.
Now add mushrooms, crushed chili flakes, black pepper , salt, lemon juice, (1/2 tsp sugar to cut lemons acid). Add boiled pasta .Stir well and put spring onions right before removing it from the stove. Garnish wid green chilis.. yummm.

Serve wid garlic bread.









Main Course and Desserts




Chicken with cashew nuts.

2 Tbsp peanut oil, 4 pcs chicken breast , 1 bunch thinly sliced scallions , 2 crushed garlic cloves, 1 cup dry roasted cashew nuts , Black pepper to taste , bell pepper, cabbage, carrots.
For its sauce u will need ; 2 tsp corn starch ( to be mixed in water and add in the end for thickening) then u will need Oyster sauce 3 t bsp , 6 tbsp chicken stalk and 2 teaspoon brown sugar.
You mussssssssttttttt try this recipe as I just love it and seriously its so tasty that I always used to order it and learnt it from the same chef smile.gif so its purely an expert chef’s recipe.

Method.

Add olive oil in a pan and add garlic paste. Cook till it becomes brown. Now add crushed chili flakes and chicken. Add salt and pepper and throw carrots, bell pepper and cabbage in it.
Add chicken stalk and oyster sauce. (if u don’t hv oyster sauce then just replace it with soy sauce and remember to put less salt in food as these sau ces r pretty salty ) Khair now add cornflour paste to thicken it. Garnish with dry roasted cashews when u dish out.
Serve with either boiled rice or egg fried rice smile.gif










Mango Meringue Dessert.

1 sliced and chopped mango. , 2 egg whites , icing sugar and chopped nuts for garnishing.
Divide the mangoes between four glasses or bowls. Beat the egg whites until stiff , beat in sugar until the mixture becomes stiff again. Top the mangoes with egg whites and place them in oven and cook further just for 2 minute or until the meringue puffs up. (remember when u top ur bowl with egg whites u need to do it to 2cm below the rim of the glass or bowl)
Take out from oven and sprinkle with chopped nuts.
Btw if u r cooking for a group of ppl then u can do it in one large bowl.











Chocolate and Banana crepes.

3 bananas, 6 tbsp orange juice ( dip bananas in orange juice and put aside)
Grated rind of one orage , few drops banana or orange essence .
For the chocolate sauce u need ; 1 tbsp unsweetened cocoa , 2 tsp corn starch , 3 tbsp milk , 40 gms semi sweet chocolate broken into pieces , ½ cup corn syrup and ¼ tsp vanilla extract.

For the crepes.
¾ cups all purpose flour , 1 tbsp unsweetened cocoa , 1 egg, 1 teaspoon oil , 1 ¼ cup milk and oil for frying.
Method.
You all know how to make crepes, just mix the ingredients well and shallow fry on pre heated pan. Flip it and cook from the other side. When done , take out in the plate and put bananas on it and roll. Pour chocolate sauce ……. Droooooooooolllll.

Nice recipes Ayesha. But for the shrimp dipping sauce, you have listed tobacco sauce as one of the ingredients, it should read tabasco sauce. Also a teaspoon of horse raddish will really zest it up.

lol . omg i am so sorry Saifr Uncle and thank u for pointing it out. i did the proof reading but i guess its the summer heat getting to my cognitive abilities unsure.gif

Cindi - The main course was made in one day but drinks tau aisay hee on and off so thought to share that together smile.gif Cooking chinese takes no time but its the preparation that drains ur energy 6.gif but once veggies are done, u can mix and match those in few recipes with entirely different taste. hei na ? and plz do try out that chicken salad. Seriously it was so tasty that i did not feel like touchuing anyother thing.

But on a serious note i am thinking to have a crash course at my home inshallah. You know its summer vacations so i was thinking why not get busy somewhere. So i just designed a pamphlet . Let's see how many gals acctually enrol =P awein just for a shughal sake keh challo let's try smile.gif

Starting from 5th August inshallah and thinking to include some Ramadan Recipes as well. Dua kijye ga. Daikhain kaisa response milta hei.

My gravy never comes out like this 6.gif Chachi's chicken is really tasty and urs looks way better than her Mashallah. Wessay yaar Barri himmat waali hein jee aap tau. Please find some time to relax too Aphro. our pace of life has become so fast that sometimes, even the simple task of relaxing turns out to be a drag. But ermmm well just dont exhaust urself too much Okay 68.gif

I know mango is king of fruits. And whole world seems to love them I dont know why I dont. I like them for their fragrance but their taste is too sweet for my liking. I am a strawberry and kiwi person cool.gif

You KNOW i love to cook... but aaj kal time nhi milta and I was inspired by this thread to get over the hulchul of the day and cook something good 1.gif

Lol the first khana was from my husband's restaurant in England smile.gif he brought it home .. but the first thing I cooked for him the day after I met him ( before ruksati and after nikkah ) was garbanzos in a tangy tomato sauce blush.gif he gobbled it down blush.gif
